Hot Tip: How not to make balsamic reduction

Location: Philadelphia, PA, USA

You make balsamic reduction by heating balsamic vinegar.  You stir this.  You can add sugar or other things.  It thickens and makes a glaze.

But if you turn your back for a minute and don't realize you're actually up on med-high, you might over-reduce it and get balsamic taffy.

Heat on very low and slowly add in some water while stirring to bring it back to a sauce consistency.
